The Red Clover Inn and Restaurant
, located just minutes away from Killington Ski Resort, is a premiere farm-to-table restaurant. Chef Dennis C. Vieira maintains a close relationship with local farmers, and the restaurant is a member of the Vermont Fresh Network, an organization that encourages direct working relationships between chefs and farmers.
Red Clover is not the only instance of farm-to-table cooking in Vermont; in fact, with the abundance of small farms in the Green Mountain State, there are many farmer's markets in the area. The farm-to-table effort unites, however, once a year in Killington, with the Farm-to-Table Festival. Usually held in mid-September, the event includes an open-air market, season beer and cider tastings, and samplings of Vermont's best local food.
